Chocolate cake with my mom.
What is your favorite pastry?
Raspberry tart with vanilla custard, and sable breton.
What is the strangest thing in your fridge?
A collection of animal fats.
Do you have a go-to midnight snack?
I don’t!
What would your last meal be?
I have too many favorites. Like the last bite that will make me choke? I guess my last meal will be through IV, that is pretty dark!

What is the first thing you learned to bake?
Fondant au chocolat, I've been baking them from the same recipe for almost 15 years!
What is your favorite pastry?
From the pastries we make, I would go for a fresh plain croissant any day.
My all time favorite pastry that we don't make (yet) is a Paris-Brest : chou pastry and praline creme mousseline!
What is the strangest thing in your fridge?
Probably homemade pickled clams from back home.
Do you have a go-to midnight snack?
I eat mint-chocolate chip ice cream every day of the year. And too much sour candy.
What would your last meal be?
Fresh Moules Marinieres with Belgian fries, and a lot of mint-chocolate chip ice cream.
